Midnight Masquerade is a mini imperial stout, when you taste this beer blind without knowing any specs you would say it's about 9 to 10% alc. Vol. But in fact it's only 5,5% alc. Vol. This beer is brewed with a special enzyme (NOLO ZYME), made for the italian craft market. It's meant for brewing No and LOW abv beers without pasteurisation. I used this to brew a mini imperial stout, almost same amounts of malts to create a stout rich in body, huge in flavour but low in alcohol.
